Shrimp Veggie Wraps in Sweet Coconut Sauce
These wraps are filled with grilled shrimp and topped with veggies, shredded cheese and a Coconut Sauce that is delicious and very different.
WHAT YOU NEED:
2 lbs fresh large or jumbo shrimp peeled and cleaned
3 cups fresh chopped veggies(cabbage, carrots, kale, jicama and anything else you like)
Fresh wraps thin and warmed
Coconut Sauce(recipe below)
HOW TO MAKE IT:
Clean shrimp and put on skewers to grill, grill just a few minutes till pink but before they curl up tightly
Warm shells in a skillet or microwave or gas stove top
Place shrimp in some of the coconut sauce, save some to drizzle over filled wraps
Place shrimp on wrap, cover with some fresh veggies, then drizzle with sauce and top with shredded cheese, wrap and serve.
Delicious for lunch or dinner
1 (14 ounce) can coconut milk
1 cup brown sugar
2 tsp soy sauce
Bring the coconut milk and brown sugar to a boil together in a heavy-bottomed
pot. Reduce heat to medium low; cook and stir while boiling until the mixture is
thick and the volume has reduced by about half, about 20 minutes.
