Caramelized Onion Swiss Burgers

We make the best burgers ever!! It's a fact, why go out when you can cook like this?

This burger is 1/2 pound of good beef, rounded out with diced fresh onions packed into the burger,
seasoned with good spices, then cooked up with carmelized onions and topped with swiss cheese and grilled buns

what you need:
1/2 lb of ground chuck for each patty
1 slice of onion diced and pressed into each burger
season each burger with salt, pepper, garlic powder, onion powder
extra sliced onions to cook with burgers
buns buttered

How to make:
Press your patties into 1/2 lb burgers and press the diced onions into each patty as you form them
Get your skillet not, then add patties to skillet and turn after a few minutes then add sliced onions to pan and let cook a few minutes till onions are golden and turning crispy and dark brown.
Top with slices of swiss cheese, turn down heat and melt cheese, Drain off any excess grease from pan and add buns on top for a few minutes till soft and toasty.

Serve with pickles and sides, Enjoy Good Food

Strawberry Banana Cheesecake Dessert

This is a creamy good Fruit Dessert, with a blend of flavors of Cheesecake, strawberries and bananas all together in creamy goodness. Enjoy Good Food

what you need:
1 box instant Cheesecake Jello Pudding mix
1 cup milk
1 small container of Strawberry yogurt
1/2 small container of whipped topping thawed
1 lb of strawberries cut up
3 bananas cut up

How to make it:
Mix your pudding and 1 cup of milk, put in fridge to chill while you cut up the fruit into bite size chunks
Then take pudding and stir in yogurt and whipped topping till smooth and gently stir in fruit

Chill till cold and serve
Double the recipe for parties.

Cheesy Potato Puffs

These are so good, Oh I mean it SOOO Good, Make extra mashed potatoes a day or two ahead and you'll be all set for this recipe. You can change up what you add to make them different each time too, they are great with lunch or dinner or as snacks at your next party. Enjoy Good Food

What you need:
2 cups mashed potatoes(make extra the day before is best)
2 egg yolks
1/4 cup Parmesan cheese (grated)
1/4 cup deli ham (diced optional)
1/4 cup jalapenos diced
1 tablespoon parsley (finely chopped)
1 tablespoon scallions (thinly sliced)
8 ounces pepper Jack cheese or Cheddar (but into 1/2-inch by 1-inch pieces)

For the breading
1 cup all-purpose flour
2 eggs (beaten)
3 cups panko breadcrumbs
kosher salt and freshly ground black pepper (to taste)

Fill a heavy-bottomed pot or fryer halfway with oil. Preheat to 365ºF.
In a large bowl, add mashed potatoes, egg yolks, Parmesan cheese, ham,  parsley, scallions, jalapenos, and a pinch of salt and pepper. Mix to combine. Form potatoes into 1/2-inch by 2-inch logs. Place a cube of pepper Jack cheese in the middle of the log.
In a shallow bowl, add the flour and season with Kosher salt and freshly ground black pepper. In a separate shallow bowl, add the eggs and whisk to combine the yolks and whites. In a third shallow bowl, add the panko breadcrumbs. Roll logs in flour, shaking off excess, dip in egg wash, then roll in breadcrumbs to coat.
Working in batches, fry the croquettes until golden-brown, about 2 minutes. Remove to paper towel-lined plate and season immediately with a pinch of salt.
Tip: make the mashed potato mixture and form into logs ahead of time and freeze. Dredge and fry just before serving

Baked Creole Chicken Breast

This is a spicy but juicy and fast easy chicken to bake, full of flavor, the olive oil really helps keep the juices in the chicken and the Creole Seasoning adds Zip to flavor it up, Enjoy Good Food

What you need:
4 skinless, boneless chicken breast halves
2 tablespoons olive oil
1 tablespoon coarse sea salt
1 tsp Creole seasoning (such as Tony Chachere's®), or to taste
pepper to taste

How to make it:
Preheat convection oven to 400 degrees F (200 degrees
Rinse Chicken then pat dry
Rub chicken breasts with olive oil and sprinkle both sides with salt and Creole seasoning and pepper. Place chicken in a broiler pan.
Bake in the preheated oven for 10 minutes. Flip chicken and cook until no longer pink in the center and the juices run clear, about 15 minutes more. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
Remove chicken from pan.

Spicy BBQ Sauce over Grilled Boneless Ribs

Love to eat Ribs? Tired of BBQ Sauce that has High Fructose Corn Syrup? Yes did you know most BBQ sauces, ketchup, Spaghetti Sauce, dressings and so much more, all has High FCS, check out your labels on the bottles, so I have decided I am done with most brands, either I search for brands that are free of HFCS or I make my own. It's actually interesting making different flavors of sauces these days and I'm getting really good at it, you can make it up and freeze extra, or can it too.

These ribs are so juicy and tender they fall apart and melt in your mouth, so try my recipes, and share my blog.

Remember Enjoy Good Food.

What you need:
Boneless Pork or Beef Ribs, with bone either is fine.
onion powder
garlic powder

HOW to make these:
First rinse your ribs and put them in a large pot of water, add kosher salt and pepper to taste
Then add the onion and garlic powder and bring to boil, then turn down the heat and simmer for a good 30 minutes to 45 minutes, depending on how thick and big the ribs are.

Meantime make your BBQ Sauce

What you need for the sauce:
Bbq Sauce


1/4 teaspoon cayenne pepper
2 teaspoons chili powder
1/3 cup Worcestershire sauce
1/3 cup brown sugar
1/2 cup white vinegar
1 2/3 cups ketchup
3 tablespoons olive oil
3 cloves garlic
1/2 white onion


Put olive oil in a sauce pan on medium heat and cook onion and garlic until they are soft.
Then add the white vinegar, ketchup, brown sugar, worcestershire sauce, chili powder, and cayenne pepper.
Let this simmer for 30 minutes.

How to make the ribs:
After the ribs have cooked on the stove, remove and drain off water, then rub with sauce
place on a hot grill and cook just a few minutes till they are nice and browned grilled to perfection, It won't take long because basically they are cooked so you're just grilling them in the sauce now

Serve with your favorite sides, these are really so good, don't take that long at all.

Easy Quick ONE HOUR Yeast ROLLS

These Rolls take no time hardly and are so easy if you have a Kitchenaid Mixer, I am one happy cook with mine. No more kneading by Hand! Enjoy good food

what you need:
1 cup of warm water
1/4 cup sugar
1/3 cup oil
2 tablespoons yeast
1 teaspoon salt
1 egg, beaten
3 1/3 cup flour

In a large bowl, mix together warm water, sugar, oil and yeast. Let stand for 15 minutes until yeast mixture is bubbly.
Stir in salt and beaten egg to yeast mixture.
Gradually add flour. Dough will be kind of sticky, but add enough flour until it's manageable. First I mix with the flat dough hook then once it starts to ball up I change to the dough hook. Let dough rest in the bowl for 10 minutes. I cover mine with a towel. This allows the dough to rise more.
Oil hands with a little oil and form dough into balls. Place balls so they don't touch on cookie sheet. Let rise for 20 more minutes. I put mine in a cold oven and cover with a light towel.

Bake in 375 degree oven for 10 minutes.
Mix 2-3 tablespoons of melted butter with honey (to taste) and brush the top of hot rolls with the honey butter.
