Creamy Garlic Chicken

I love garlic and I use it in lots of my recipes, it's so good for what ales you, this recipe is a Very Creamy Good Tasting Recipe, I use Sour Cream but you could use Yogurt if you like too.

Serves 4

What you need:
20 oz chicken thighs, skin-on and deboned
2 tablespoons olive oil
12-15 cloves garlic(Minced if you don't like large chunks)
1/2 cup chicken broth
1/3 cup white wine
1/4 cup sour cream
1 tsp Italian Seasoning, optional
Salt, to taste
Ground black pepper

how to make it:

Season the chicken with a little salt and pepper and seasonings.
Heat up a skillet on medium heat, add 1 tablespoon of olive oil.
Pan-fry the chicken until both surfaces become crispy or nicely browned.
Remove the chicken from the skillet and set aside.
Drain the chicken fat from the skillet. Add the remaining olive oil and saute the
garlic until light brown. Add the chicken back into the skillet, follow by the
chicken broth, white wine and cook a few minutes till bubbly, then turn down the heat and add the sour cream and do not let it BOIL but cook it till it thickens up a bit.
Serve immediately.

Hard Rock Cafe ® Homemade Chicken Noodle Soup

It's the chunkiest dang chicken soup you'll ever eat and it comes from the first worldwide theme eatery and hip hangout. Crank up the rock 'n roll and throw all this good stuff into a pot and always Enjoy Good Food

What you need:
1 pound chicken breast fillets
1 pound chicken thigh fillets
vegetable oil
2 tablespoons butter
1 cup chopped onion
1/2 cup diced celery
4 cups chicken stock
2 cups water
1 cup sliced carrot
1 teaspoon salt
1/2 teaspoon cracked black pepper
1/2 teaspoon minced fresh parsley
2 cups egg noodles

How to Make it:
Preheat oven to 375 degrees.
Rub a little vegetable oil over the surface of each piece of
 chicken and arrange them on a baking sheet. Bake for 25 minutes.
 Remove the chicken from the oven when it's done and set it aside
 to cool.
Melt the butter in a large saucepan or dutch oven over medium
 heat. Sauté the onion and celery in the saucepan for just 4 to 5
 minutes. You don't want to brown the veggies.
Dice the chicken and add it to the pot along with the remaining
ingredients, except the noodles.
Bring the soup to a boil, reduce the heat and simmer for 30
minutes or until the carrots are soft.
Add the noodles and simmer for an additional 15 minutes, or
 until the noodles are tender. Serve with a pinch of minced fresh
 parsley sprinkled on top.
Makes 6 servings.

Blueberry Buttermilk Muffins

Nothing better than a warm muffin and these are the best with fresh blueberries and buttermilk keep them nice and moist. Enjoy Good Food
If you make these blueberry buttermilk muffins in extra large muffin tins you will get 6 big muffins

Serves: 6-12
2 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon baking soda
3/4 cup sugar
1/4 teaspoon salt
2 eggs, beaten
1 cup buttermilk
4 ounces butter or 1/2 cup canola oil
1 1/2 cups blueberries
1 teaspoon vanilla (optional)

Sift dry ingredients together in a large bowl.
In another bowl, whisk eggs, buttermilk and butter that has been melted and browned slightly.
Make a well in dry ingredients and pour in liquid ingredients, mixing quickly.
Fold in blueberries.
Spoon batter into greased muffin cups and bake till golden brown.
Bake at 400 F for 20 -30 minutes.

Apple and Caramel Bread Pudding

A twist to delicious bread pudding. This one is extra good with Applesauce and Vanilla

1 cup unsweetened applesauce
1 cup vanilla soymilk
3 eggs
1/4 cup packed brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla
5 cups 1-inch cubes French bread
3 tablespoons sliced almonds
1/4 cup Raisins
1/4 cup caramel fat-free topping, heated

Heat oven to 350°F. Spray 9-inch quiche dish or pie plate with cooking spray.

In large bowl, mix all ingredients except bread, almonds and caramel topping with spoon until smooth. Fold in bread. Pour into quiche dish; sprinkle with almonds.

Bake 30 to 35 minutes or until golden brown and set. Cut into wedges. Drizzle caramel topping over each serving.

Seven Layer Magic Cookie Bars

This Eagle Brand best-loved classic is a favorite of kids and adults for its
deliciously unique taste. Eagle Brand® is the magic ingredient in this easy
cookie bar recipe. Old traditional Recipes are still some of the best ever. Enjoy
Good Food

Servings: Makes 24 to 36 bars
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

1/2 cup (1 stick) butter or margarine
1 1/2 cups graham cracker crumbs
1 (14-ounce) can Eagle Brand® Sweetened Condensed Milk (NOT evaporated milk)
1 cup (ounces) butterscotch-flavored chips
1 cup (6 ounces) semi-sweet chocolate chips
1 1/3 cups flaked coconut
1 cup chopped nuts

Preheat oven to 350 degrees F, (325° for glass dish). In 13x9-inch baking
pan, melt butter in oven.  Sprinkle crumbs over butter; pour Eagle Brand®
evenly on top of crumbs. Top with remaining ingredients in order listed;
press down firmly with fork.  Bake 25 minutes or until lightly browned.
Cool. Chill if desired. Cut into bars. Store covered at room temperature.

French Bread Pizza

We Love Love LOVE Pizza here so we try all kinds, this is a fast make at home tasty French Bread Pizza Easy but really good for a fast dinner anytime. Enjoy Good Food

What you need:
A loaf or 2 of French Bread(1 loaf serves up to 4 people)
For Pizza Sauce:
1 small can for each loaf of tomato sauce
1 tsp pizza seasoning or Italian
1/2 tsp of onion powder
1/2 tsp of garlic powder

Toppings to your liking:
We like:
Ham slices
Smoked Sausage
Red Onion sliced
Black Olives/Green Olives
3 cups or more Cheeses Shredded lots and Parmesan
Olive Oil

How to make it:
First take your french bread and scoop out some of the center bread
Next drizzle a little Olive Oil over the edge of bread,and sprinkle with pizza or italian Seasonings then spoon on Sauce
Next spread some of the cheeses, then toppings how you like and lastly add more cheeses and especially Parmesan

In a preheated oven at 350 degrees bake for about 20 minutes. Remove let cool just a few minutes then slice and serve

Cajun Sausage Gravy Just Like Popeye's

Copy cat recipe of Popeye's cajun gravy recipe. It even has the tiny little bits of meat that the original has and just the right Kick of Cajun flavor.

3 cups gravy

What you Need:
1 1/2 tablespoons vegetable oil
2 chicken gizzards
1 small onion diced
2 garlic cloves diced
1 small can of diced green chilis (for less spice use diced green bell peppers)
1/4 cup ground pork sausage(your favorite)
2 cups water
14 ounces chicken broth
2 tablespoons cornstarch
1 tablespoon flour
2 teaspoons milk
2 teaspoons distilled white vinegar
1 teaspoon sugar
1 teaspoon salt
1/2 teaspoon fresh coarse ground black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon dried parsley flakes

How to make it:
Heat 1 tablespoon vegetable oil in a large saucepan.
Saute chicken gizzard in the oil for 4 to 5 minutes until cooked.
Remove gizzard from the pan and finely mince.
Next put your ground pork in the pan and cook till brown
Use a potato masher to smash meat into tiny pieces as it browns.
Add onion and garlic and cook and lastly add your diced green chilis
Add water and chicken broth to the pan.
Immediately whisk in cornstarch and flour.
Add remaining ingredients and bring the mixture to a boil.
Reduce heat and simmer gravy for 30 to 35 minutes or until thick.

This is delicious over mashed potatoes and served with your favorite chicken recipe
I like it with my Rotisserie Chicken

Rotisserie Style Chicken Homestyle

There are so many things you can do with Rotisserie Chicken but why would you want to buy them at the store when you can make up a couple easily at home. Cook 2 at a time and use one for this week's lunches or dinner and serve the other one for dinner. Enjoy good food

2 teaspoons salt
1 teaspoons paprika
1 teaspoon onion powder
1 teaspoon dried thyme
1 teaspoon white pepper
1/2 teaspoon cayenne pepper
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1 onion, quartered
1 (4 pound) whole chicken

How to Make it:
In a small bowl, mix together salt, paprika, onion powder, thyme, white pepper, black pepper, cayenne pepper, and garlic powder. Remove and discard giblets from chicken. Rinse chicken cavity, and pat dry with paper towel. Rub chicken inside and out with spice mixture. Place 1 onion into the cavity of the chicken. Place chicken in a resealable bag or double wrap with plastic wrap. Refrigerate overnight, or at least 4 to 6 hours.
Preheat oven to 250 degrees F (120 degrees C).
Place chickens in a roasting pan. Bake uncovered for 4-5 hours, to a minimum internal temperature of 180 degrees F (85 degrees C). Let the chickens stand for 10 minutes before carving.

I make a Cajun Sausage Gravy to go with this that is better than Popeye's Gravy.

Burrito Pie

This is a layered burrito baked in layers and it's bubbly and delicious. Spice it up as much as you like.
Serve like a pie and garnish with sour cream, salsa, lettuce and tomato or any toppings you like best.

what you need:
2 pounds ground beef
1 onion, chopped
2 teaspoons minced garlic
2 tsp Taco Seasoning(I make my own)
1 can black olives, sliced and drained
1 can diced green chili peppers
1 (10 ounce) can diced tomatoes with green chile peppers
1 (16 ounce) jar salsa
2 (16 ounce) cans refried beans
1 can of corn-drained
6-8 (12 inch) flour tortillas
9 ounces shredded Colby cheese

How to make it:
Preheat oven to 350 degrees F
In a large skillet over medium heat, saute the ground beef for 5 minutes. Add the onion and garlic, and saute for 5 more minutes. Drain any excess fat, if desired. Mix in the olives, green chile peppers, tomatoes with green chile peppers, taco sauce, seasoning and refried beans. Stir mixture thoroughly, reduce heat to low, and let simmer for 15 to 20 minutes. Add corn last
Spread a thin layer of the meat mixture in the bottom of a  greased 4 quart casserole dish. Cover with a layer of tortillas followed by more meat mixture, then a layer of cheese. Repeat tortilla, meat, cheese pattern until all the tortillas are used, topping off with a layer of meat mixture and cheese.
Bake for 20 to 30 minutes in the preheated oven, or until cheese is slightly brown and bubbly.
Let cool a few minutes then serve with toppings of your choice like sour cream, chives, green onions diced and any other toppings

Homemade Crock Pot BEEF and NOODLES

Nothing better than Hot Homemade BEEF and NOODLES. You get a delicious warm feeling just smelling it cooking in the kitchen. Both my Mom and Grandma made this recipe for years and to this day when I get homesick and miss being a kid I like to make this up. This is an easy and inexpensive recipe too. Enjoy Good Food

serves 8

What you need:
2 – 2 ½ lb beef chuck roast
4 c beef broth
1 c onion, chopped (or ¼ c dried minced onion)
2 tsp onion powder
1 tsp garlic powder
1 Tb dried parsley
3 cloves garlic minced
1 8 oz pkg of mushrooms sliced thin(optional)
salt & pepper to taste
extra-wide egg noodles, prepared

How to make it:
Put your roast in the bottom of your slow cooker.
Mix together your broth, onion, garlic and seasonings.
Pour broth mixture over your roast.
Cover and cook on low for 6-8 hours.
Add mushrooms last hour before serving
I like to cook my noodles separate then add to the Crock Pot the last 30 minutes
Then serve all mixed together so the juices have time to really marinate with the noodles.
I hate naked noodles :) don't you?
 Serve. with a side veggie and hot rolls

Light and hot dinner rolls, you can make this recipe into bread, rolls. knots or twists, use your imagination and make them into whatever shapes you like. They are delicious

What you Need:
4 - 5 cups all-purpose flour
1/3 cup sugar
1 teaspoon salt
1 package dry yeast
1 1/2 cups hot tap water
1 egg
1/3 cup softened butter

How to make them:
Sift together two cups of the flour with the sugar, and stir in the yeast. With mixer at low speed, blend butter into the flour mixture. Add the hot water (the hottest it comes from your tap, all at once, with mixer running. Add the egg, and continue mixing.

Add in the remaining two cups flour to make a soft dough.
(At this point, I changed my mixer beaters for dough hooks and let the mixer knead the dough for about ten minutes and then put it into an oiled bowl to rise.) Mix until dough is not real sticky and pulls away from bowl into a ball on dough hooks.

IF YOU don't have a good stand mixer with dough hooks You CAN DO IT THIS WAY:

Knead lightly on a floured board and shape into a ball. Put into an oiled bowl, cover with a towel, and allow to rise in a warm spot until doubled, about two hours.

Punch dough down. At this point it can either be refrigerated or shaped in rolls or loaves and allowed to rise a second time until doubled.

Bake in a preheated 350 degree oven until barely brown. May be frozen after baking and reheated to serve

Garlic rolls or knots:
Roll into rolls or knots and sprinkle with garlic powder and coarse salt before putting on baking pan to bake
