Hearty Homemade Potato Soup



This soup is always a request when it's cold or when some of my family feels under the weather
It's good with Grilled Sandwiches too, Enjoy Good Food


What you Need:
4 tablespoons butter
4 teaspoons chopped onions
4 teaspoons chopped celery
6 potatoes, chopped small
1 cup cooked ham or bacon(if desired)
2 qt. boiling water
1 teaspoon salt
1 teaspoon pepper
1 teaspoon caraway seed
4 teaspoons chopped parsley
2 tablespoon flour

How to Make it:
Heat 1 tablespoon butter, add the onions and celery, and simmer 10
minutes. Add potatoes, cover, and cook 2 minutes. Add the ham or bacon and the water and
seasonings, boil for 1 hour. Add more boiling water as it evaporates.
Brown the flour and mix with the remaining butter, add some potato
liquid and cook. Combine and serve hot with croutons. Any cold cooked
leftover vegetable may be added
