Clam Chowder




The are 5 favorite soups at our house that get requested the most and this is one of them on a cold day.

What you NEED:
1 quart clams
2-inch square fat salt pork
1 sliced onion
4 cups of potatoes cut in dice 3/4" square
4 cups milk
4 teaspoons butter
1/8 teaspoon pepper
1 teaspoon salt
soda crackers and chives

What you Need to DO:
Drain the clams and remove the pieces of shell. Retain the liquor
In a Pan put in a little olive oil heat up, add the onion, saute 5 minutes
add the cubed potatoes, clam liquor and enough water to
cover. Cook until nearly tender, pour into a saucepan, and add the
milk, butter, pepper and salt. When the potatoes are done, add clams, whole
or cut up, and the crackers. Cook 3 minutes longer.
Top with fresh chopped Chives and Serve with crackers
