Tropical Fruit Kabobs With Key Lime-Yogurt Sauce


Makes: 4 servings
Cook: 4 minutes

8 large fresh strawberries
1 barely ripe red banana, cut into 1-inch pieces
4 kiwi, peeled and halved
2 cups cut fresh pineapple, cut into 1-inch pieces
2 cups cut mango, cut into wedges or 1-inch cubes


1 cup low-fat vanilla yogurt
2 tablespoons key lime juice
2 teaspoons honey
Pinch cayenne pepper


Soak four 12-inch wooden skewers in water for at least 1 hour. Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.

Drain skewers. Alternately thread fruit on skewers. For Key Lime-Yogurt Sauce, in a small bowl, combine yogurt, lime juice, honey, and cayenne. Cover with plastic wrap and store in refrigerator until ready to use.

Lightly spray skewers with nonstick cooking spray. Place skewers on a hot, oiled grill. Cook for 2 to 3 minutes per side or until the fruit is warm and slightly soft. Serve immediately with Key Lime-Yogurt Sauce.
