Tomato And Mozzarella Skewers


Makes: 8 servings
Cook: 8 minutes

2⁄3 cup olive oil and vinegar salad dressing, Newman’s Own®
1⁄2 cup water
1 packet (1.06-ounce) zesty herbs marinade mix, McCormick® Grill Mates®
24 ounces fresh mozzarella, cut into 1-inch cubes, Precious®
24 cherry tomatoes
1 red onion, cut into 1-inch pieces
1 sourdough baguette, cut into 1⁄2-inch-thick slices


In a small bowl, stir together salad dressing, water, and herb marinade mix; set aside.

Place cheese, tomatoes, and onion in a large zip-top plastic bag; add dressing mixture. Squeeze out air and seal. Marinate in the refrigerator for 1 to 4 hours.

Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking. Alternately place cheese, tomatoes, and onion on skewers. Brush bread with some of the marinade mixture. Reserve marinade. Grill skewers for 1 to 2 minutes per side or until heated through, turning once. Toast bread on grill until golden (about 3 minutes per side). Serve skewers and bread immediately. Drizzle with additional marinade.
