Easy Cheesy Zucchini Casserole

It's summer and so the veggie to buy is zucchini, what to do with it? Here is a delicious veggie casserole for you today.

3 medium zucchini
½ stick of butter
1 medium chopped onion
¼ tsp of salt
¼ tsp of pepper
1 beaten egg
8 saltine crackers
¼ cup of colby jack shredded cheese
¼ cup of shredded sharp cheddar cheese

Preheat oven to 350 degrees and spray your casserole dish with cooking spray.
Slice your zucchini into disks and boil until slightly tender. Take care not to overcook them or they will turn to mush.
In a small bowl add butter, salt, pepper, onion, egg, and crackers. Stir until well combined. Add more salt and pepper if needed.
Drain your zucchini and lay them in the bottom of your casserole dish, covering the bottom.
Pour your mixture in the small bowl over the top.
Sprinkle with the cheeses until the whole top is covered.
Bake, uncovered for 30 minutes or until the cheese is fully melted and brown on top.
