All I read and hear is add beans to your diet, so I have with this recipe and more coming(be on the watch)
I searched around for ideas what to put into my pasta salad and I have come up with a zesty salsa salad with a little cheese added. I think you will like it too, it's a little like taco salad vegetarian style
8 oz penne pasta-try whole wheat
1 can black beans, rinsed and drained
1 C Mexican blend shredded cheese
3 tbsp extra virgin olive oil
1/2 c. cherry tomatos (I used roma tomatos)
1/2 c. frozen corn, thawed
1/4 c. chopped green onion, white parts
⅓ C green pepper, finely diced
⅓ C sweet onion, finely diced
juice of 1/2 lemon
1/4 c. chopped fresh chives
1 tbsp fresh cilantro
1 ripe avocado
1 16 oz jar salsa
salt/pepper to taste
Fresh Garlic diced-as much as you like
Heat a large saucepan of water to boiling. Add the pasta and cook until al dente, about 11 minutes.
Drain the pasta in a strainer and cool down with cold water. Drain again and place in a bowl.
Add remaining ingredients and stir well.
Refrigerate at least 3 hours to chill.
