Apple Streusel Coffee Cake

I like the smell of apples and cinnamon in the house, and to sit down with a cup of tea, (or coffee) and have a piece of warm cake, Nothing better


1 cup all-purpose flour
1 tsp. baking powder
One quarter tsp. baking soda
Pinch of salt
One quarter cup butter, softened
One half cup sugar
1 egg
1 tsp. vanilla
One quarter cup nonfat plain yogurt
2 cups apples, cored and sliced but not peeled


One third cup flour
One quarter cup brown sugar
1 tsp. cinnamon
One quarter cup butter, softened


Combine flour, baking powder, baking soda and salt in a bowl and mix well. In a separate bowl, combine butter and

sugar and beat with hand mixer, add egg, vanilla and yogurt and mix well. Slowly add flour mixture to batter and

mix well. Spray a 9-inch pan with non-stick cooking spray and pour batter into pan. Arrange apples over batter.

Combine topping ingredients and mix until a crumb mixture forms. Sprinkle over apples and bake at 350 degrees for

about 30 minutes.

The Skinny: Use your favorite egg and sugar substitute.
