Broccoli & Cauliflower Salad and Homemade Ranch Dressing
Summertime is the time for salads, So I am always looking for inspiring new recipes to try
2 stalks uncooked broccoli, Chopped
1 head (medium) uncooked cauliflower,Chopped
4 slices crisped cooked bacon, broken into bite-sized pieces
1/2 cup sweet red pepper, Chopped
1/2 cup green pepper, Chopped
1 large fresh tomato chopped
1/2 large uncooked red onion, Chopped
1 cup chopped ripe black olive
1/2 cup low-fat shredded colby jack cheese (you can use other cheeses)
1 1/2 cup fat free Ranch dressing , or just Ranch
Blanch the broccoli and cauliflower and then chop add everything in a large bowel add the dressing and toss. Place in the refrigerator for four 4 hours and serve.
Homemade Ranch Dressing
1 1/2 cups mayonnaise
1/2 cup sour cream
1/4 cup heavy cream
2 tablespoons lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon dried dill weed
1. Place all ingredients in blender or food processor, blitz on high speed for 2 minutes.
2. The mixture will look runny, but will thicken as it chills.
3. Store in an airtight container in refrigerator for up to two weeks.
