ASPARAGUS-ONION CASSEROLE

One pound pkg. asparagus, trimmed & cut into 1-in. pieces
2 onions sliced small
5 tablespoons butter
2 tablespoons flour
1 cup milk
3-oz. pkg. cubed cream cheese
Sal & Pepper to taste
1/2 shredded Cheddar cheese
1 cup bread crumbs

SAUTE asparagus and onions in one tablespoon butter until crisp-tender for about eight minutes. Then transfer to an ungreased 1-1/2 quart casserole dish. Set aside. Melt two tablespoons butter in a saucepan, whisk in flour until smooth. Gradually add your milk and heat and stir until thickened, about two minutes. Reduce heat then mix in cream cheese, salt and pepper to taste, stirring until cheese melts. Now pour over the asparagus and onions, sprinkle with Cheddar cheese. Melt remaining butter in a small skillet then remove from heat and add your bread crumbs, tossing gently. Now sprinkle over your casserole. Bake at 350F for 35 to 40 minutes. This will serve around four to six people.


NOTE to make this a meal add 2 c diced cooked ham or meat you like
