1 tablespoon olive oil
1/2 onion, chopped
1 red bell pepper, chopped
1 cup frozen corn
2 boneless, skinless chicken breasts, cooked and shredded
1 cup barbecue sauce
1 (6 ounce) package cornbread stuffing mix
1/2 cup low-fat milk
1 cup shredded cheddar cheese
1.Preheat the oven to 375 degrees F.
2.Heat the oil in a large saucepan over medium-high heat. Add the onions and cook until tender, about three minutes. Add the pepper and corn and cook another three minutes.
3.Reduce the heat to low. Stir in the chicken and barbecue sauce and heat through. Transfer the chicken mixture to a 2-quart baking dish and set aside.
4.In a large bowl mix together the stuffing mix, milk and cheese. Spread it evenly over the barbecue chicken mixture. Bake for 20 - 25 minutes or until topping is golden brown and the sauce bubbles.
